Freezer Meals–any ideas?

I am compiling a list of some meals that I can make in the next 3 weeks that will freeze well so that we will have a little stockpile when the baby arrives.  I would love some ideas/suggestions.  I am planning to make these meals for our suppers and just make a double batch and freeze half of it.  Here is what I have so far:

  • Lasagna
  • Chili
  • Macaroni and Cheese
  • Vegetable Beef Soup
  • Ham and Cheese Quiche
  • Chicken Pot Pie

Any other ideas? We don’t eat much soup and I’m not so big on Mexican (especially since I’ll be nursing . . . don’t know how Layla would react to Mexican food at first!).

    Funny…I am working on the exact same thing at this moment! Still looking for more ideas too, so if you get any good ones could you pass them along?

    shepherd’s pie, meatloaf, cheese manicotti or stuffed shells, any meat casserole – just make sure that if you are covering the dish with foil you don’t top it with cheddar cheese as it eats through foil and can give your dish freezer burn. congratulations on the new addition, and good luck!!

    Cook ground beef or chicken and freeze plain, or add taco seasoning for a quick taco meal or sloppy joe dinner. It so much easier to have the meat cooked and then you can throw a meal together pretty quickly. Sticky Chicken (google recipe/precooked) is really yummy. We did this a lot.

    Also cooking pasta (al dente – don’t over cook) and rice and then freezing is a time saver. It tastes fine.

    I recently had surgery and made some things for about 10 days and cooking the meat worked to my favor. It made putting together Tortellini Soup, Chicken Spaghetti, Taco Soup, etc very simple and it just needed to cook/bake.
